Super easy. Super delicious. Super FALL.
Pumpkin Alfredo Tortellini
+ 2 9-ounce packages cheese tortellini
+ 1 tablespoon butter
+ 1 small shallot, finely chopped
+ 1/2 cup canned pumpkin
+ pinch of nutmeg
+ 1 1/4 cups heavy cream
+ 1/4 cup grated parmesan cheese (plus more for topping)
+ parsley, chopped for topping
+ salt & pepper
Bring a large pot of salted water to a boil. Add tortellini and cook as package directs. Reserve 1/2 cup of the cooking water. Meanwhile, heat butter in a skillet and add shallot and cook until soft. Add pumpkin and nutmeg while stirring for 1 minute. Stir in the cream and bring to a low boil. Reduce heat to medium low; simmer, stirring, until slightly thickened (about 5 minutes). Stir in the cheese and cook about 1 minute more. Season with salt and pepper. Add tortellino to the skillet and toss, use the water to thin the sauce if needed. Divide among bowls, top with cheese & parsley.
*I added a few slices of breaded and stuffed chicken to our meal!

Wow sounds so yummy!! I'm all about fall foods! If you like sweets, try this:
ReplyDelete1 box cake mix (I used spice, but vanilla or yellow will work)
1 15 oz can pumpkin
Mix and bake 30 min at 350 degrees. Frosting is of your choice! Seriously the best cake ever - sooo moist and yummy!
