If you follow me on instagram at all you would know that we visited Muir Woods a few weeks ago.  This redwood forest is about 12 miles north of the city and definitely worth a trip.  When we entered the national park area it was other-worldly.  After getting over the initial feeling that I was in a Star Wars episode and that an ewok was going to jump out at me I started to appreciate the beauty around us. An almost eerie quiet blanketed the forest bed and redwoods towered over us as rays of sun shot through the tall branches.  Some of these trees are hundreds and hundreds of years old, their trunks are so large that 7-8 people could join arms and wrap themselves around it.  And the most amazing part?  These aren't even the big guys-- you would have to drive several hours further nearly to Oregon to reach the massive redwoods, the ones with trunks so large they can be used as dance floors (yes, they really have that).  California continues to surprise me with the vast contrast in climate and landscape.  You truly can experience it all here, and we have been so thankful to see these things with our own eyes.  If you ever get a chance, head to Muir Woods to take a step into a different world!  Oh yes, dogs aren't allowed but being the rebels we are, we totally snuck Bella inside.  She loved it, and was very quite and well behaved in her little bag.  She loved smelling all the smells inside too!  Here are just a handful of my favorite pictures from the day!

This week's workout is the CURTSY LUNGE!  This move is really fantastic because not only do you work your legs and butt, you also work the side abs with the twisting motion, and your upper body with the dumbells!  If you are new to this series you should know that I am all about moved that target multiple areas of the body. Try this move after you have completed the cardio portion of your exercise (remember, we are trying to get in at least 30-45 minutes of cardio every single day).  Lunge and twist 12 times on each side and repeat three sets. Feel the burn!

Nutrition 101: Why Breakfast?

These past few weeks I have been talking a lot about practical ways to shed weight with diet, cut excess calories and replace staples with healthy and tasty options. If you have been trying to use a few of my tips you have probably increased your daily water intake, cut sugar out of your diet and been snacking smarter.   All of these things are really fantastic but we need to back up a little bit and talk about how we start our day.  I am talking about breakfast!  Growing up I never really ate breakfast, and when I did it was usually leftovers, cookies and candy.  I am not even kidding.  I never liked pancakes or eggs or any of the typical breakfast foods.  Fast forward to now and I can't even imagine beginning my day without a healthy, wholesome fiber heavy meal.  I have heard from many of you that breakfast isn't a big deal but it really is and I am going to tell you why:   first, it revs up your metabolism that has been sleeping all night.  You are going to want your metabolism firing on all cylinders so your body only stores what it needs and gets rid of everything else for the entire day ahead.  Second, it keeps your portions in check for the day.  Let me explain--- those of you who skip breakfast or only drink coffee with an apple in the mornings are probably starving come lunchtime.  This may mean you make unhealthy decisions when it comes time to order your meal, or maybe you just overeat to curb your hunger.  Neither of these are good and you will start to pack on the pounds.  Eating breakfast that is fiber heavy fills you up--- you won't be as hungry when lunchtime hits and you will choose good things to consume and most likely won't overeat.    Did you know that people who start the day off with a healthy breakfast are 76% more likely to continue to make healthy choices throughout the day?  It's true-- so set your alarm and make time for breakfast! 

So, what should you eat? 
So don't think this means you can fill your plate with syrupy pancakes!  Nope, there are a few things you should avoid:

too sugary/carb filled:  pancakes, waffles, donuts, bagels, scones, muffins, etc. 
too fatty: fried eggs, bacon, cream cheese, cheesy anything, sausage, etc.  

Try these healthy (and tasty!) options instead

Oatmeal, flaxseed, blueberries & almonds. To me, this is the perfect breakfast. Steel-cut oatmeal is probably the healthier choice, but if you are in a hurry, the instant kind will do fine (it doesn’t have as much fiber, but the other ingredients make up for that). After microwaving the oatmeal, add ground flaxseed, frozen blueberries, sliced almonds. You can add a little cinnamon and honey/agave (not a lot) if you’re using the non-instant oatmeal. That’s four power foods, full of fiber and nutrients and protein and good fats, with only a couple of minutes of prep time. And very tasty!
Kashi GoLean Crunch. Actually, any whole-grain, high-fiber cereal is a good choice, but I mention this particular one because it’s a favorite of mine. It has a high amount of protein and fiber, low sugar. Add hormone free low-fat milk or soy milk (which has 1/3 the saturated fat of 1% milk), perhaps some berries if you like.
Scrambled tofu. Healthier than scrambled eggs. Add some onions, green peppers or other veggies, some light soy sauce or tamari, maybe some garlic powder, and black pepper, stir-fry with a little olive oil. Eat with whole-grain toast. Fast and delicious.
Fresh berries, yogurt, granola. Get low-fat yogurt (not non-fat, as it often has too much sugar) or soy yogurt, cut up some berries or other fruits, add some healthy cereal. I actually use the Kashi Golean Crunch instead of granola, as many brands of granola have way too much fat and/or sugar.
Grapefruit with whole-wheat toast & almond butter. Add a little sugar on top of the grapefruit, and it’s actually pretty good. The almond butter is healthier than peanut-butter, with lots of good protein to fill you up.
Fresh fruit salad. Cut up some apples, melons, berries, oranges, pears, bananas, grapes … any or all or whatever your favorite fruits are. Add a little bit of lime or lemon juice. Perfect.
Protein shake with extras. I use soy protein powder, but whey works well too. Blend up with low-fat milk or soy milk, some frozen blueberries, and perhaps some almond butter or oatmeal. That may sound weird, but it’s actually pretty good, and pretty filling. A little ground flax seed works well too.
Eggs with peppers. I’m not a huge fan of eggs, but many people love them. Egg whites are healthier than whole eggs. Scramble with a little olive oil, red and green bell peppers, maybe broccoli, onions,spinach, tomato black pepper. Goes well with whole-wheat toast.
Cottage cheese and fruit. Get low-fat cottage cheese. Add any kind of fruit. Apples, citrus, berries.


Recipe of the Week: Sweet Potato Pork Quesadillas


I originally posted about this recipe here, but  had to re-share because it is truly one of my favorites! You can sub the pork with ground turkey and use whole wheat wraps.  Instead of the original sour cream/blue cheese dip mix up the blue cheese crumbles with non-fat yogurt (it tastes the same as sour cream trust me!)

Pork Sweet Potato Quesadillas
1/2-1lb ground pork 
1 medium sweet potato
1 bunch scallions diagonally sliced
3 tbsp butter
1 1/2 tbsp chile powder (I used my tastefully simple chili powder)
3 large garlic cloves, minced (I always use extra garlic.  I don't want a vampire to catch me off guard.)
1/2 cup fresh chopped cilantro
1 package shredded mexican cheese
oversized tortilla wraps (I used whole wheat or multi-grain)
salt & pepper to taste

In a skillet, drizzle olive oil.  Throw in pork and add the chili powder of your choice as well as some salt and pepper to taste.  Brown, about 4 minutes. Meanwhile, pop your sweet potato in the microwave to soften.  (If it is whole, pierce it with a fork and put it in for about 7 minutes, if you slice it microwave for 5 minutes).  Once it comes out, scoop out the insides and mash with a fork.  Set aside. 

Your pork should be almost cooked through at this point so add your minced garlic, scallions and the sweet potato.  Give it a good stir.  Cook for 2 more minutes or so.  Finally, add the cilantro and more salt if you need it. Cook until warmed through, additional minute or so.  Scoop entire mixture out into a bowl.  

Scrape any crud out into the trash and add the rest of the butter to the pan. Pop a tortilla down and quickly add a handful of cheese to half.  Spread a few spoonfuls of pork mixture over the cheese and finally sprinkle a little more cheese on top.  Fold tortilla over.  If you have a teapot, now is the time. SMASH THAT SUCKER.  Press pretty firmly for 30 seconds or so.  If you don't have a teapot another pan will do.  I don't know, look around and see what you have.  Just don't sit on it, you might burn your butt. Flip quesadilla over and smashed for 15 seconds or so on the other side.

Repeat this process until you have used up all of you pork/potato mixture.  Serve with pickled jalepeno and sauce of your choice.

Golden Gate Bridge 75th Anniversary Festival

This past Sunday the Golden Gate Bridge celebrated 75 years of existence.   Despite the weather calling for blustery temperatures we decided to make the trek into the city to see the city rally around a beloved landmark.  We hopped on local transit, the "Bart" which (within five minutes aboard) I not-so-lovingly renamed the "Fart"-- I am sure no one has been so witty in the past to call it that before.  It really smelled, and after that we had to take a bus.  Let's just say there is a reason I avoid public transportation at all cost. But we arrived in the city, unscathed (albeit with that lingering smell of fart following us for a few blocks) and made it to the celebration!  The festival spread out from Pier 39 and the Wharf all the way down to the Presidio near the base of the bridge. We wandered along, got free iphone cases from Speck (limited edition anniversary cases--pretty cool), ate out of food trucks (finally!)  and began to realize we were in for a long night as the temperature began to drop.   I quickly began to feel like we were back in Michigan mid-winter when my arms went numb from the elbows down and I couldn't feel my face anymore.  Thankfully, once the fireworks show began we forgot all of that because the show was pretty spectacular.  Fireworks lit up the sky, shot from boats and from the bridge itself.  We felt really lucky to be living in the area during this time to be there and witness a small piece of history!  It almost made the 2 hour 3 mile trek back to the nearest Bart Fart Station bearable. DON'T ASK... let's just say we got our workout in for the day!  Here are some of my favorite photos, enjoy!

In about 2 months we will be on vacation in my very favorite spot on Earth--- Traverse City, Michigan.
That's right, I just used "Michigan" and "favorite" in the same sentence!  Seriously though, there is nothing better than being on the lake, s'mores by the campfire, ice cream runs to "fishtown" and cherries plucked straight from the tree on a bike ride.  This is what summer is about, and everyone has this type of place-- somewhere that means so much, holds so much promise of fun and always lives up to your expectations.  This year, I plan on visiting a few more of the local area beaches, and exploring the dunes.  It will be the first year I have my very own bike to bring and I am excited about exercising on the winding roads leading between wineries and water. Ah, the views! The food!  The family! I can't wait, and this morning I am dreaming of vacation!    In a few hours we are heading into San Francisco to celebrate the Golden Gate Bridge's 75th anniversary! (Google's search page has a little homage to it right now, so fun!)  I CANT WAIT!  I hope I can fulfill my dream of eating out of a food truck today. I have been in California for almost 5 months and still haven't done that, which is kind of a travesty! Today is the day though, I can feel it!

Dear Summer, "Relax" has been my mantra this week. Thank you for warm days spent by the pool. Dear Body, I know you have don't feel well but let's get it together, I have things to get done you know! Dear Bella, since we haven't been able to go on walks this week you are getting extra antsy and have been ripping up toilet paper into shreds and barking at ANY noise you hear!  You are starting to get a liiiiittle naughty! Dear Husband, This week for no reason at all I got you an IPAD that you have been talking about wanting since before Christmas. Don't forget how spoiled you are next time I ask for a pair of shoes, okay?  Dear Styled Photo Shoot, I am so excited for you!  I can't wait for everyone to see it here Tuesday morning!  Dear Seattle, 15 days!  Dear Golden Gate Bridge 75th Anniversary Festival,  I am so excited we are living in San Francisco to celebrate you!  We are going to have so much fun! Dear Husband, Can I buy a Mark III and sell my Mark II? pretty please? Dear Bloggy Friends, Last Friday I commented on every last one of the 165 linkers posts!  I will do my very best this week too, but you guys are killing me!  I love it, but my wrists hate it!  :)

I have been trying to ignore it but I have to admit it-- my lupus is flaring up and I am just exhausted. I have managed to keep the house pretty clean, and brush me hair even but this little blog of mine is taking a hit.  I don't know if you knew this but I very rarely schedule posts--- so when I get sick or my lupus takes me out of the game for a while it is hard for me to keep up with it in the way that I would like to.    So today was supposed to be the fifth installment of the Get Fit Series, but since I couldn't get outside and get exercise pictures done, or my post typed up its going to have to be pushed back until next week.  I'm really sorry but I know that if I don't slow down when I am feeling this way that I will pay for it and it will take that much longer for me to bounce back.  I should also say that this isn't anything out of the norm, I am not feeling particularly worse than normal. It has just become a fact that  every once in a while fatigue kind of overcomes me in a way that most people don't experience. The exhaustion I am experiencing now is most likely from a too busy weekend-- and its not the kind that is cured with sleep.  It is more of an annoying kind where I WANT to go do things but my body is so tired sometimes I can't even get off the couch to walk to the fridge for yet another rootbeer and stack of chips ahoy cookies.  (Yes, I get to eat whatever I want when I feel like this!)

This post isn't all bad news though-- I did take Bella into San Francisco yesterday for a second opinion and the vet there does NOT think Bella needs ACL surgery.  He prescribed her some anti-inflammatory and she is going to go on a little rest from running off leash.  He is optimistic that is all she needs and the surgeon that recommended surgery was jumping the gun.  This was great news for us, and Bella isn't hopping very much and is using her leg a lot more so I am really hopeful she will be just fine!

Santa Cruz Beach Day

Sunday after church we headed to Santa Cruz for an impromptu beach day. We didn't take too many pictures-- I mostly ran around with Bella and didn't concern myself with capturing the day entirely.  And even though we don't have a lot of good pictures from the day, the memories are perfect.  Sometimes its nice to step away from the technology and soak up the day. Although Bella is having knee issues, you wouldn't have known it. She swam, dug and ate every clump of seaweed on the beach!  I would say our Sunday afternoon was a complete success!
