I'm back! We have internet again! That was a LONG two weeks! I wish I could say that it was a nice break from social media but really, it wasn't. For the first portion of the first week I was busy scrubbing down every surface of our new home. We didn't have cable, internet or any furniture so I watched a lot of movies during my down time. Like, way more than is acceptable or okay. I was scraping the bottom of the barrel of my movie collection with things like "Elizabethtown".... however, I DID get to watch my favorite movie series of all time, Anne of Green Gables. I always watch it at least once a year, and this was a great time to catch up on my favorites. But, I still missed being online, I have so much to share! And something VERY, VERY special is coming Thursday! I am SO pumped for it. Make sure you check back here if you don't come back any other day of the week!
In other home news, I finally ordered a couch, bedroom nightstands & dresser as well as a dining room set and hutch yesterday. These are all really great things, but we have to wait two MONTHS to get our items (because I ordered a custom fabric on the couch). So while I really want to take photos of our new house and show you all around, unfortunately we basically only have empty rooms. And furniture is EXPENSIVE. I almost fainted when I paid for the furniture last night, while kissing dreams of new clothes and going out to eat goodbye. I know we will be happier with furnishing our home rather than going out and spending money on frivolous things though in the future...
I also go to the doctor this Friday and I am hoping they will tell me what the gender of baby Slater is. If they don't, I have to wait until mid-April to find out! A whole month more! EEK! I hope they can tell me! Fingers crossed tight on that! I honestly have no idea what we are having. At first I had a feeling it was a girl, but as soon as I told everyone that I had a dream that very same night that it was a boy. Thus, I have not a clue. We are going to be excited no matter what, we just want a healthy, perfect little baby!

For dinner I made an easy chicken fajitas. Recipe below.
Chicken Fajitas (adapted from Food Network March 2013 Magazine)
Ingredients:
1 tsp chili powder
3/4 tsp cumin
fresh pepper and salt
1 pound boneless, skinless chicken breast
2 tbsp EVOO
2 bell peppers, sliced (I used three as I was serving four hungry people!)
1 red onion, sliced
2 garlic cloves, chopped
1/2 tsp grated lime zest, plus wedges for serving
8 corn tortillas (we hate the taste of those so I use whole wheat tortillas)
1/2 cup fresh salsa
1/3 cup cotija cheese (I used Kraft Mexican White Cheese)
Directions:
Preheat the oven to 425. Mix 1/4 tsp spices with salt and pepper and rub on chicken breast (I used a chili and lime pre-mixed gourmet spice with a little salt on mine). Heat 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook, turning until golden about 4-5 minutes per side. Transfer chicken to a baking sheet and bake an additional 8-10 minutes. Meanwhile, keeping your skillet on the stove add your sliced peppers and onion with the olive oil. Add garlic and the remaining spices until veggies are wilted and soft, about 8 minutes. Stir in lime zest and season with salt. Warm tortillas in the oven or microwave and then assemble your fajitas. Add chicken, peppers, cheese and fresh salsa. (We also added fresh avocado). Squeeze lime wedge over top and serve!

ReplyDeleteWhen my daughter was home we watched Anne of Green Gables all the time. Since she married I only have boys here now, so if I want to watch it I have to do it late at night or when I'm sewing. I like to watch it in fall for some reason.
Isn't it the best?! It just never gets old... I wish I could live in that time! Fall is a great time to watch it! :)
DeleteI remember feeling my stomach drop when my husband and I (as newlyweds) ordered furniture for our new house. It was exciting, but terrifying at the same time - because you are SO right, it is SO expensive. Definitely an investment well worth it though! We've been enjoying ours since we purchased it two years ago. No regrets there! Can't wait to see yours when it's arrived, I know it will be beautiful!:)

Now I really want to watch Ann of Green Gables while eating a fajita! :) Hope you get to find out the gender soon and not have to wait another month! That happened to us with our second. They made us wait a whole month and it was soo hard! I think I cried during the ultrasound because they were making me wait. haha. nothing like those pregnancy hormones. :)
