Slow Cooker Beef Stew

If you want a recipe that will make the man in your life happy (hello, meat and potatoes), and warm you straight to the bone, this beef stew is for you.  I love that I can throw it into the crockpot and in a few hours it is cooked to creamy perfection.  This stew also freezes really well and makes great leftovers.  With more snow in our forecast this week I am certain this stew will be on our menu yet again this week!

Ingredients:
1 pound beef stew meat
1 bag baby carrots
5-6 medium sized red sized potatoes
1 package sliced baby bella mushrooms (we add lots because we LOVE mushrooms)
Half of one medium shallot, chopped
2 cans cream of mushroom
1 cup water
1/2 cup red cooking wine
1 package beefy onion soup mix (find in the soup aisle!)
1 tsp salt
1 tsp pepper

Literally just mix everything up and throw it in the crockpot on low for 4-6 hours.  I usually wait an throw my meat in about an hour before we eat so it will  be just barely rare on the inside.   This stew also pairs really well with beer baked bread.  Enjoy!
